Dinner: Thanks To Shift, A Mexican Bowl

The new Shift food wagon has become an integral part of our lives. Tonight, a rainy, cold, and gloomy night, neither of us felt like cooking; we had been working all day.

The Shift Wagon feels mystical to us; they came out of nowhere and have altered our lives.

I love photographing the renovated food cart. My cameras love it.

We both had the same idea at once, a frequent idea on our Thursdays, Fridays, and Saturdays of late.

It’s good that they are not open every night, or we might stop cooking altogether. Sometimes we get their excellent wood-fried pizzas, but the salads are amazing too.

I looked at tonight’s menu to see what Corey and Sarah had dreamed up for tonight, aside from their radically re-imagined pizzas.

We found what we wanted in the salads department:

The Mexican Bowl – Rice, black beans, Mexican street corn, fresh Jalapeno, Tomato, Avocado, and tofu.  Maria and I looked at one another and nodded

. I ordered two Mexican Bowls on the Shift app and set the pickup time for 5 p.m.

The food awaited us when we drove up in the rain and wind. We’re only a few miles away.

We will have a delightful, unusual, and surprisingly original meal in our small, quiet rural town.

These good food angels have come to make us happy and refreshed and end our yearnings.

Suddenly, our small country town doesn’t look so small any longer. Tonight, it feels like Brooklyn. It doesn’t really matter where we live anymore

. We can find what we need and want somewhere, even right under our noses..

We did not ever expect to eat food like this in Cambridge, N.Y.

In a few minutes, we’ll listen to a red-hot Canadian songwriter and musician, Julian Taylor, live-streamed on Saratoga Spring’s famous Cafe Lena website. I listened to him for hours last night.

I want more.

Maybe we are in Brooklyn. Life is changing around here.

And all this joy on a cold and dark night without leaving our living room fire. Okay, technology brings some beautiful things.

  1. Sorry to hear about another month of your boot, but you do what you must and I know you will deal. I *am* excited and rather envious to see your Shift dinner though! Looked at their menu and most of their pizzas and ALL of their salads are healthy and wonderful looking! Lucky you!
